This is absolutely the best list I have seen for apps for mobile devices (includes Android apps, too). Note: It's 108 pages in length, therefore you may want to just download and NOT print it all. The file is full of links, so the downloaded pdf will be more useful. It is getting a little outdated (c) 2012, so some of the apps may no longer be available.

I like it best in the horizontal direction so notes can be typed in the left-hand pane. The papers available on the free version make it a pretty cool app to create your notebooks of your own, too.)

Following an iPad in Education workshop led by Meg Wilson (@iPodsibilities on Twitter) that was held at Apple last week, I asked an Apple employee to share with me useful materials for follow up.
Here are the sites that were suggested:
Lisa Nielsen is best known as creator of The Innovative Educator blog
and Transforming Education for the 21st Century
learning network. Lisa is an outspoken and passionate advocate of innovative education. She is frequently covered by local and national media for her views on "Thinking Outside the Ban" and determining ways to harness the power of technology for instruction and providing a voice to educators and students. Based in New York City, Ms. Nielsen has worked for more than a decade in various capacities helping schools and districts to educate in innovative ways that will prepare students for 21st century success.
